Tesla Diner Set to Become Full-Service Restaurant as Chef Eric Greenspan Departs

Tesla’s Hollywood Diner is heading for another major shake-up. Eric Greenspan — the acclaimed chef and co-operator who helped launch the retro-futuristic restaurant alongside its massive 80-stall V4 Supercharger station— has confirmed he is exiting the restaurant. Along with Greenspan’s departure, staff at the Hollywood location say they were recently informed the diner will shift to a full-service model by January — a move that would represent its most significant operational overhaul to date. The change is expected to replace the current hybrid walk-up and drive-in setup with a traditional sit-down restaurant format. In a statement provided to the L.A. Times, Greenspan said his exit has been in motion for more than a month. He’s now turning his attention to a new project of his own: a Jewish deli called Mish. “I am leaving the Tesla Diner project to focus on the opening of Mish, my long-desired Jewish deli. Projects like Mish and the Tesla Diner require a sharpness of focus and attention, and my focus and attention is now squarely on Mish.” Greenspan’s departure marks the end of a brief but eventful chapter for one of Tesla’s most talked-about ventures. Since opening in July 2025, the restaurant has drawn packed crowds, and social-media hype, quickly becoming a tourist magnet among Tesla fans and food lovers alike. Greenspan helped shape the diner’s original menu — a lineup of American classics such as burgers, shakes, fried chicken and waffles, and tuna melts. But surging demand quickly led to changes. Within weeks of launch, Tesla significantly reduced the menu to improve speed and consistency, trimming offerings to a handful of sandwiches, sides, pies, and shakes. Greenspan had said at the time the menu would “evolve,” but still needed to be manageable given the unprecedented volume Tesla was encountering. So far the only statistic Tesla has released about the Diner’s performance since its opening is that it sold 50,000 burgers in the third quarter. That equates to approximately $675,000 in revenue in just over two months of operation.
